APPLESAUCE NOODLE PUDDING 1 lb medium noodles (cooked) 1 stick unsalted butter 4 eggs beaten 3 teaspoons lemon juice (optional) 1/2 cup sugar 2/3 of a medium jar applesauce (about 2 cups) 1-1/2 cup graham cracker crumbs Use some butter to coat the bottom of the pan and melt the rest. Mix about 1/3 of the meltedbutter with the graham cracker crumbs by hand. Set aside. Mix the remaining ingredients together and put in pan. Add more applesauce if too thick. Sprinkle the graham cracker crumb mixture evenly over noodles Mix together some sugar & cinnamon and sprinkle lightly on top Bake 350 45min. Originally from Rose Linden
